If you're looking for a more grown up version of Mac & Cheese but still economical, here you go!
Using the Oval Microwave Cooker place 4 cups water, 1 tsp vegetable/olive oil, 1 tsp salt and cook in microwave for 6-8 minutes until boiling. Add 4 cups dry egg noodles, stir and cover. Cook in microwave, 6-8 minutes stirring halfway through cooking . Let sit at end for 5 minutes while you prepare remaining ingredients.
Remaining Ingredients needed:
2 cups/16ozs. sour cream
2 cups/16ozs. cottage cheese
1 clove minced garlic
1 tsp Worcestershire sauce
1/4 cup chopped green onion
1/4 cup butter
salt and pepper to taste.
Place onion and butter in the 2 cup Microwave pitcher and cook in microwave for 2 minutes, stirring every minute. Drain any remaining liquid from cooked noodles and now add all the remaining ingredients including the cooked onion, stir gently to mix well. Cook in microwave for 10-12 minutes, turn container 1/2 turn halfway through cooking. Let sit 6 minutes.
Serve with a salad or steamed vegetables.
